Chicken Rotini

So easy and delicious!

Ingredients

  • 3 links of Spolumbo’s Spicy Chicken
  • 4 tablespoons of olive oil
  • 3 cups onion (chopped)
  • 2 gloves garlic crushed
  • 2 – 28 oz. Cans diced tomatoes
  • 1 – 28 oz. Can tomato puree
  • 1 – 12 oz. Can tomato paste
  • 2 cups water
  • 1 ½ teaspoons dried oregano
  • 1-teaspoon fresh ground black pepper
  • 2 teaspoons salt
  • 1 cup chopped Italian parsley
  • ¼ cup fresh basil
  • 1 – pound pasta
  • Grated Parmesan or Romano cheese (optional)

Directions

Broil sausage for two or three minutes to partially cook. Slice to bite-size portions and set aside.

Coat the bottom of a deep skillet with olive oil and heat on low. Add the garlic and onion; simmer until the garlic is golden brown.

Add all other ingredients, including the sausage and bring to a slow boil over medium heat.

Simmer sauce for about two and a half hours. Boil and drain pasta. Spoon sauce over pasta and sprinkle with cheese.

Comments

So simple and quick to make. I sometimes substitute the sausages with Spolumbo’s Chicken Sundried Tomato & Basil instead of Spicy Chicken. It brings it all together.

A patchwork of Mediterranean delicacies to snack over with friends and wine.

Ingredients

  • 60g feta cheese
  • 60g fresh ricotta cheese
  • 6-8 Slices of crusty bread or crostini
  • 60g well-aged crumbly goat cheese (Pecorino, Crotonese, etc.)

Directions

Slice sausages into equal bite-sized rounds and fast fry in a pan with very little oild over medium heat. Cook the milder flavours first and the spicier ones last, or use separate pans to avoid cross-contamination of spice.Turn all sausages over halfway through to sear and seal both
sides of the exposed meat.

Skewer the sausage pieces with toothpicks or colored spears to distinguish between flavours.  Spoon the mixed olives next to the sausages in the center of the platter and add cheese to the other side of the olives, so the hot items do not melt the cold ones.

Sprinkle with whole shelled walnuts and garnish with whole basil leaves. Serve bread in a separate basket or on a cutting board at the table.

Combine this platter with a side of wine-seared figs and fresh grapes, or a traditional Italian tomato salad.

This is a terrific fall harvest recipe and a hearty way to enjoy Spolumbo’s sausages.

Ingredients

  • 2 links of Spolumbo’s Spicy Italian or Mild Italian Sausage
  • 1 tablespoon of olive oil
  • 3 large potatoes (cubed ½”)
  • 2 red belle peppers (cut julienne style)
  • 1 cup white onion (chopped thick)
  • 3 cloves of garlic (chopped fine)
  • ½ tsp crushed chilies or 1 ½ tsp chili powder
  • 1 ½ tsp of ground oregano
  • salt & pepper to taste

Directions

Bake or barbecue sausages until almost done.

Cut to bite-size portions and set aside. Heat oil over medium heat in a deep fry pan. Add potatoes.

Cook potatoes 5 minutes; add peppers, onions and garlic. Cook 10 minutes more, stirring occasionally. Peppers should begin to soften; potatoes will be crispy brown.

Add sausage, simmer an additional 10 minutes. Mix in remaining spices one at a time.

Fresh and filling pasta salad with sausage slices and grilled veggies.

Ingredients

  • ½ green pepper, cut in chunks
  • ½ red pepper, cut in chunks
  • ½ red onion, cut in chunks
  • 1 small zucchini, cut in chunks
  • 3 mild Italian sausages, grilled
  • ½ pkg bacon, cooked
  • 5 cups uncooked Catelli Ancient Grains Fusilli
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp cracked pepper
  • olive oil
  • 3 tbsp white vinegar
  • 1 container small bocconcini
  • 1 tbsp lemon
  • ¼ cup fresh basil, sliced thin

Directions

  1. Add peppers and onion to a bowl. Drizzle in 1 tsp of oil, a pinch of salt and cracked pepper.
  2. Add vegetables to a grill pan set over medium high heat on the BBQ and grill for about 5 minutes. While they are grilling, toss zucchini into same bowl, drizzle in 1 tsp of oil and a pinch of salt and cracked pepper. Mix and add to grill pan with other veggies. Cook an additional 5 minutes or until tender and lightly charred all over.
  3. In a pan of salted boiling water add fusilli. Cook according to package instructions. Drain and spread on to a baking pan with edges to cool down.
  4. Drain and cut each bocconcini into fours. Set aside.
  5. Sliced sausage into thin slices. Set aside.
  6. Cut bacon into chunks. Set aside.
  7. In a cup or small bowl mix minced garlic with olive oil, salt and pepper. Whisk in vinegar.
  8. In a large pasta bowl add cooled pasta, sausage, cheese, grilled veggies, bacon and dressing. Toss to combine.
  9. Sprinkle with fresh lemon, salt, pepper and basil. Serve immediately.

Summer fresh grilled veggies with fresh basil and bocconcini is favourite dish around here when it gets to hot to cook. Leftover veggies are an easy addition the next day to any dish, like these Grilled Veggie, Pesto & Bocconcini Pizzas.

Today we jazzed up our grilled veggies with bacon, grilled Italian Sausage and lots of fresh garlic. It was a hot one so making something easy and cool for dinner was right up our alley. If you have a side burner on your grill you could also cook the bacon and pasta right there to avoid your oven all together.

In our family we have some who don’t like peppers, some zucchini and some bocconcini cheese (insert gasp). Since I don’t cater to anyone’s likes or dislikes when I make a meal, I always tell them to pick out what they don’t like and eat what they do.

This would be an easy dish to partially prepare in advance and take camping. Make your dressing and store in a sealed jar. Cook all veggies and store in the fridge in a sealed container. Cook the rest when you are there and assemble.
